{ rotisserie chicken salad }

This chicken salad is so refreshing! With the juicy grapes, sweet cheese and savory chicken, my baby loves it. And, when served on whole grain bread, it covers each of the food groups.

Rotisserie Chicken Salad

~ 3 cups diced, rotisserie chicken breast
~ 1/2 cup fine chopped celery
~ 1 1/2 cup diced swiss cheese
~ 1 1/2 cups halved green grapes
~ 1/2 cup chopped green onions (optional)
~ 1  8 oz. can water chestnuts, drained and chopped (optional)
~ 1/2 cup mayonaise
~ 1/2 tsp. salt
~ 3/4 tsp. poultry seasoning
~ 1/4 tsp. onion powder
~ 1/4 tsp. garlic powder
~ 1/4 tsp. ground black pepper
~ 1 Tbsp. lemon juice

In a large bowl, toss the chicken, cheese, grapes, celery, green onions and water chestnuts. In a medium bowl, whisk the mayo, salt, poultry seasoning, onion powder, garlic powder, pepper and lemon juice. Add the contents of the medium bowl to the large bowl, stir to coat and chill until serving.
