The picnic tables haven't been distributed to all the parks in Saskatoon just yet, but don't let that stop you from having a picnic this week.  If you don't already have a designated park blanket, it's time to christen one with the first stains of spring! 

We had a lovely picnic with friends in the park today, and I brought along this wonderful chicken salad that is always a big hit. (Casey, if you're reading this, thank you, love you, miss you, call me!) With the juicy grapes, sweet cheese and savory chicken, the babies love it. And, when served on whole grain bread, it covers each of the food groups.

Rotisserie Chicken Salad
~ 3 cups diced, rotisserie chicken breast
~ 1/2 cup fine chopped celery
~ 1 1/2 cup diced swiss cheese
~ 1 1/2 cups halved green grapes
~ 1/2 cup chopped green onions (optional)
~ 1 8 oz. can water chestnuts, drained and chopped (optional)
~ 1/2 cup mayonaise
~ 1/2 tsp. salt
~ 3/4 tsp. poultry seasoning
~ 1/4 tsp. onion powder
~ 1/4 tsp. garlic powder
~ 1/4 tsp. ground black pepper
~ 1 Tbsp. lemon juice

In a large bowl, toss the chicken, cheese, grapes, celery, green onions and water chestnuts. In a medium bowl, whisk the mayo, salt, poultry seasoning, onion powder, garlic powder, pepper and lemon juice. Add the contents of the medium bowl to the large bowl, stir to coat and chill until serving.
